Pico de Gallo with Salted Herbs from Bas-Saint-Laurent

A fresh, colourful recipe that’s perfect for summer. Inspired by a recipe prepared by our Mexican workers, this quick salsa is delicious as a side dish, in tacos or simply served with toasted pita chips.

Ingredients
- 1 yellow onion, finely chopped
- 2 tomatoes, diced
- 1 handful fresh cilantro, chopped
- 1 avocado, peeled, pitted and diced
- 2 tbsp lime juice
- ½ to 1 tsp dehydrated Salted Herbs from Bas-Saint-Laurent, to taste
Preparation
- In a large bowl, combine the onion, tomatoes, cilantro and avocado. Add the lime juice and Salted Herbs from Bas-Saint-Laurent, then gently toss to coat the ingredients without mashing the avocado.
- Serve immediately to preserve the freshness and texture of the vegetables.

- Salted Herbs from Bas-Saint-Laurent are highly flavourful. Start with a small amount and adjust the seasoning to taste.
- This pico de gallo is delicious with fish or shrimp tacos, toasted pita chips, as a BBQ side dish, or served alongside grilled fish and other summer favourites.
