Fresh, colourful and made for sharing, these tacos are perfect for summer gatherings. Served family-style at the centre of the table, they’re bursting with flavour, with Salted Herbs from Bas-Saint-Laurent adding incredible taste with just a small amount.

Ingredients for 4 (2 TO 3 TACOS PER PERSON)

For the Shrimp & Tortillas

  • 1 tbsp extra-virgin olive oil<br/>
  • 1 tbsp lime juice
  • 1 tsp dehydrated Salted Herbs from Bas-Saint-Laurent
  • 1 tsp maple syrup
  • 2 tsp sweet paprika
  • ½ tsp ground cumin
  • 500 g raw peeled shrimp (91–110 count), deveined and tails removed
  • Small 7-inch corn tortillas (2 to 3 per person)
  • Freshly ground pepper, to taste

Toppings (optional and to taste)

Shrimp & Tortillas

  1. In a small bowl, whisk together the olive oil, lime juice, maple syrup, dehydrated Salted Herbs from Bas-Saint-Laurent, paprika, cumin and pepper. Set aside.
  2. Place the shrimp in a large bowl. Pour the seasoning mixture over the shrimp and toss to coat evenly.
  3. Heat a non-stick skillet over medium heat. Cook the shrimp until fully cooked, pink and lightly browned.
  4. Warm the tortillas in a dry skillet for about 30 seconds per side, until soft and lightly golden.

Assembly

  1. When ready to serve, fill the tortillas with your choice of toppings and enjoy.

  • Salted Herbs from Bas-Saint-Laurent are naturally very flavourful, so it’s always best to start with a small amount and adjust the seasoning to your taste.
  • For a fully summer-inspired version with a delicious smoky touch, the shrimp can also be cooked on the BBQ using a grill pan or plancha. The tortillas can be warmed directly on the grill for a few seconds per side, until heated through, soft and lightly charred.

  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • ½ tsp Classic Salted Herbs from Bas-Saint-Laurent
  • ½ tsp lime zest<br/>
  • 1 tbsp lime juice<br/>
  • 1½ tsp maple syrup<br/>
  • 1 handful fresh cilantro or fresh flat-leaf parsley, finely chopped<br/>
  • Freshly ground pepper, to taste

Preparation

  1. In a bowl, combine all ingredients and mix until smooth and well blended. Adjust the amount of Salted Herbs from Bas-Saint-Laurent to taste.

  • This dip can be stored in an airtight container in the refrigerator for 2 to 3 days.
  • Perfect with tacos, shrimp or fish, this dip is also delicious served with smashed potatoes, in sandwiches and wraps, alongside grilled vegetables, tossed into pasta salads or enjoyed as a summer dip.

These easy homemade pita chips are perfect for summer gatherings and happy hours. A touch of Salted Herbs from Bas-Saint-Laurent is all it takes to make them irresistibly flavourful. Fair warning… they tend to disappear very quickly!

  1. Preheat the oven to 200°C (400°F).
  2. Line a large baking sheet with a silicone baking mat.
  3. In a small bowl, combine the oil, Salted Herbs from Bas-Saint-Laurent and pepper.
  4. Using a pastry brush, brush both sides of each pita with the seasoned oil mixture. Stack the pitas on a work surface and cut each one into 8 triangles. Arrange the pita triangles on the prepared baking sheet. Bake for about 5 minutes, or until lightly golden and crisp. Keep a close eye on them, as they can brown (and burn!) quickly. If desired, sprinkle with grated Parmesan cheese after baking for an extra flavourful touch.

  • This recipe can also be prepared in an air fryer.
  • Without the Parmesan cheese, the pita chips can be stored in an airtight container at room temperature for 3 to 5 days.
  • These pita chips are perfect served with guacamole, pico de gallo, lime and salted herb dip, or your favourite summer dips. They also make a great addition to appetizer platters and BBQ gatherings.

  1. In a small blender, blend all ingredients (except the garnish) until smooth and creamy. Add a little water, if needed, to adjust the consistency.

  • How to reduce the heat of jalapeños
    To make jalapeños milder, remove the seeds and the white membranes inside the pepper. Most of the capsaicin responsible for the heat is concentrated in these parts. This will give you a softer, more balanced flavour while preserving the pepper’s characteristic freshness.
  • Garlic substitution
    If using jarred minced garlic instead of fresh garlic, 1 large garlic clove is equivalent to approximately 1 teaspoon of minced garlic.
  • Serving suggestion
    Guacamole is best enjoyed fresh, shortly after preparation, when it is still vibrant green and full of flavour. Serve it with toasted pita chips, tortilla chips, fresh vegetables, in tacos or as a topping for summer grilled dishes.
