For the grilled vegetables

PREPARING THE RICE AND SHRIMP

  • 1⅓ cups basmati rice
  • 32 raw shrimp (21/25 size), peeled with tails on
  • 1 tbsp vegetable cooking oil
  • 1 tbsp maple syrup
  • 2 tsp lime juice
  • 1 handful fresh cilantro, finely chopped
  • 1 large garlic clove, pressed
  • 1 tsp Dehydrated Salted Herbs from Bas-Saint-Laurent
  • Freshly ground pepper, to taste

Preparation

For the grilled vegetables

  1. Preheat the barbecue to medium heat.
  2. In a large bowl, combine the mushrooms, bell peppers, zucchini and onions. Add the oil, Salted Herbs and black pepper, then toss to coat the vegetables evenly.
    Transfer the vegetables to a BBQ grill pan or grilling basket and cook until tender and nicely charred.

PREPARING THE RICE AND SHRIMP

  1. Cook the rice according to the package directions. Set aside.
  2. In a large bowl, add the shrimp. Add the oil, maple syrup, lime juice, cilantro, garlic, Salted Herbs and black pepper, then gently toss to coat evenly.
  3. Thread the shrimp onto bamboo or wooden skewers (4 shrimp per skewer).
  4. Place the skewers on the grill and cook for about 2 minutes per side, or until the shrimp are fully cooked.
  5. Divide the rice, grilled vegetables and shrimp skewers among four plates. Serve with the Fresh Lime and Salted Herbs Sauce.

  • Salted Herbs from Bas-Saint-Laurent are naturally very flavourful, so it’s always best to start with a small amount and adjust the seasoning to your taste.

  • 4 cups watermelon, cut into cubes (or cantaloupe)
  • 2 Lebanese cucumbers, sliced
  • ½ cup red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup lightly toasted pumpkin seeds
  • A few fresh mint leaves
  • 2 tbsp extra virgin olive oil or virgin camelina oil
  • 4 tsp lemon juice
  • 2 tsp honey
  • ½ tsp Dehydrated Salted Herbs from Bas-Saint-Laurent
  • Freshly ground pepper, to taste

Preparation

  1. Arrange the watermelon, cucumber, onion, feta, pumpkin seeds and mint leaves creatively on a large serving platter. Set aside. Set aside.
  2. In a small bowl, whisk together the oil, lemon juice, honey, Salted Herbs and black pepper. Pour over the salad ingredients and distribute evenly.

  1. Lightly brush the focaccia with oil, then grill for a few minutes on the barbecue, in a skillet or in the oven until lightly golden.
  2. Spread the Fresh Lime and Salted Herbs Sauce inside the focaccia. Layer the grilled vegetables, then season evenly with a pinch of Salted Herbs and freshly ground black pepper, to taste. Top with feta cheese and arugula.
    Close the sandwich, cut in half and serve immediately.

Baby potatoes

Butter Mixture

  • 6 tsp softened butter
  • 4 tsp grated Parmesan cheese
  • 1 small handful fresh flat-leaf parsley, finely chopped

Preparation

  1. Place the potatoes in a saucepan, cover with water, add a pinch of Salted Herbs and bring to a boil. Cook for about 15 minutes, or until fork-tender. Drain and set aside.
  2. Preheat the oven to 425°F (220°C).
    1. Line a baking sheet with a silicone baking mat and arrange the potatoes on top. Using the bottom of a glass, gently press each potato to flatten slightly without breaking them apart. Set aside.
    2. In a small bowl, combine the butter, Parmesan and parsley. Set aside. Set aside.
    3. In another small bowl, combine the olive oil, 1 teaspoon of Salted Herbs and black pepper.
    4. Using a pastry brush, coat each potato with the oil mixture.
    5. Top the centre of each potato with a small amount of the butter mixture prepared earlier. Bake for 30 to 35 minutes, or until the potatoes are golden brown and crispy.
    6. Serve garnished with parsley or chives and enjoy with the Fresh Lime and Salted Herbs Sauce.

    • This recipe can also be prepared in an air fryer at 400°F (200°C) for 15 to 20 minutes, or until the potatoes are golden brown and perfectly crispy.
